What does "the going" mean in horse racing?

The state of the ground, which can change everything. On turf, from fastest to slowest: hard, firm, good to firm, good, good to soft, soft and heavy. All-weather tracks run from fast to slow, with standard in the middle.

In practice

The going describes how soft or firm the ground is. Some horses love the mud and others need fast ground, so the going can change the whole race.

The Funteron way: fans should not need to know any of this to have a bet. Funteron is designed to show every bet in plain words and in money: what it costs, what comes back if it wins and what you lose if it does not.
